Squash Casserole image

Very good casserole. Enjoy!

Number Of Ingredients 11

2 c sliced tender summer squash
1/2 c uncooked minute rice
1/4 c minced onion
1 tsp parsley flakes
1/2 tsp salt
1 dash(es) accent
1 dash(es) garlic powder
3/4 c boiling water
3 medium eggs
1/2 c milk
1/2 c cheddar cheese

Steps:

  • 1. In a medium saucepan, combine the squash, rice, onion, parsley, salt, accent, garlic, and boiling water. Boil in covered pan for 15 minutes. Beat together
  • 2. Place squash mixture in a medium casserole dish. Blend your eggs and milk and pour over the top of the squash mixture. Add 1/2c. cheddar cheese. Bake at 350 for 40 minutes or until top is puffy and cheese is golden.
