Steps:
- In a dry skillet render the bacon over medium high heat, turning it often until it is crisp and golden brown. Place on paper towels. Discard all but one TBS of fat from the skillet. Add raisins and onion and saute over low heat for 8 minutes or until onion softens and raisins are plumb. Add vinaigrette and stir just to warm it through. Break the bacon into 1 inch pieces. In large salad bowl, combine the spinach and bacon. Toss gently. Add salt and pepper and toss again. Serve at once with crusty bread. Serves 4.
