SPINACH RICOTTA PIE image

Number Of Ingredients 10

1 qt chopped fresh spinach
1/2 cup chopped onion
1 8 oz pkg. cream cheese, softened
3/4 cup low fat ricotta cheese
1/2 tsp. basil
1/2 tsp. oregano
1/8 tsp. garlic powder
1/8 tsp. pepper
3/4 cup chopped tomatoes
2 Tbs. grated parmesan

Steps:

  • Preheat oven to 350. Cook onions and spinach in saucepan until tender (about 5 minutes). Blend cheeses and spices with electric mixer until well blended. Stir in spinach mixture. Spread into 9-inch pie plate. Bake 15-20 minutes or until heated through. Top with tomatoes and Parmesan. Serve with rye crackers or bagel crisps. 12 servings.
