SPINACH RAMEKIN image

Number Of Ingredients 11

1 pkg. spinach chopped (frozen or fresh)
1 Shallot or small onion, finely diced
2 Tbsp olive oil
1 tsp lemon juice
3 eggs
4 Tbsp flour
3/4 stick of butter, melted
1 Cup grated Swiss or mozzarella
1/2 Cup goat cheese crumbled
1/4 Cup Parmesan
Salt and pepper to taste

Steps:

  • Preheat the oven to 350 degrees 1. Cook the shallot in the olive oil until soft 2. Add spinach and cook until wilted 3. Beat eggs in a large bowl 3. Whisk in flour, butter, salt & pepper 4. Fold in the goat cheese, and mozzarella 5. Stir in spinach and shallot mixture. 6. Butter a small casserole dish and sprinkle with half of the parmesan cheese 7. Pour in the spinach, egg, and cheese mixture 8. Top with the other half of the parmesan cheese 9. Bake in casserole dish for 1 hour
