SPINACH & MUSHROOM SAUTE' image

I MADE THIS QUICK VEGETABLE DISH TO GO WITH a precooked BBQ Pork I had purchased from Sam's Club for a quick Fix Dinner. It was simple easy and quite tasty. It was so good I skipped on the potatoes and the B B Q & just ate the veggies. I love all sorts of veggies and this was a quick fix side dish. A great way to add fresh veggies to the dinner table in a hurry.

Number Of Ingredients 8

1 1/2 cup(s) small baby carrots
1 pound(s) fresh sliced mushrooms
1 pound(s) fresh baby spinach
3 clove(s) fresh garlic minced
2 large onions, sliced thick
- shaved/shredded cheese of choice (i used mozzarella
1 teaspoon(s) steak seasoning
2-3 tablespoon(s) olive oil

Steps:

  • In a large skillet(I used a 16 inch size) add the olive oil and heat over medium high heat.
  • Add the baby carrots and sauté for about 5-6 minutes.
  • Then add the sliced onions, garlic and mushrooms, allow to cook for about 5 minutes or until they begin to soften.
  • Now add the fresh baby spinach, it will look like a lot, but shrinks very quickly. Stir to mix with other veggies, until spinach wilts, add the steak seasoning, and allow to cook for a couple extra minutes.
  • Remove from heat, add the shredded cheese, and cover with lid to allow cheese to melt.
  • Or serve individually and add the shredded cheese while veggies are hot stir so that cheese can melt. Enjoy with other accompaniments if desired.
