Spinach Madeline image

This dish has graced my mother's, and then my, Christmas table since it first appeared in the Baton Rouge, Louisiana Junior League's first edition of River Roads Recipes cookbook back in the '50's or '60's. It has graced thousands of tables besides ours!! It is a Louisiana favorite. Hope you all enjoy it!

Number Of Ingredients 13

2 box frozen chopped spinach
2 Tbsp flour
1 medium onion, chopped
1/2 c spinach liquid from cooked spinach
6 oz jalapeno cheese
1/2 stick butter
1/2 c evaporated milk
3/4 tsp garlic powder
1/4 tsp celery salt
1 Tbsp worcestershire sauce
salt and pepper to taste
1 dash(es) tabasco sauce
bread crumbs

Steps:

  • 1. Cook spinach and drain, reserving 1/2 cup liquid.
  • 2. Melt butter, add onions and flour, stir until smooth.
  • 3. Add milk, mix well. Add rest of seasonings, and 4 ounces of the cheese, cut into small pieces. Stir until cheese is melted.
  • 4. Combine rest of ingredients, except bread crumbs and remaining cheese in a Pam sprayed cassserole dish. Top with bread crumbs and remaining cheese cut into tiny pieces.
  • 5. Bake at 350 degrees for 20-25 minutes.
