SPINACH LASAGNA ROLL UPS image

Yield 8 Roll Ups

Number Of Ingredients 15

1 package of lasagna noodles (use whole wheat or multi-grain lasagna noodles if desired)
8 ounce package Part Skim Ricotta Cheese
1 cup grated Part Skim Mozarella Cheese
1/2 cup grated Parmesan Cheese
1 large egg
1/4 large Onion
1 tblspn of minced Garlic
1 large bag Baby Spinach
2 tblspns of Olive Oil
Red Pepper Flakes
Dried or Fresh Basil
Dried Oregano
Cracked Black Pepper
2 cups of favorite Tomato Sauce
Extra Mozarella and Parmesan Cheese for topping

Steps:

  • Preparing Ingredients: Pre-heat oven to 400 degrees. Cook lasagna noodles according to package directions. While noodles are cooking, heat medium saute pan with olive oil. Add garlic and onion to pan. While garlic and onions are cooking, add red pepper flakes, basil, oregano and black pepper to taste. Continue cooking until onions are translucent -- about 7 minutes. Add baby spinach to pan and cook until wilted, stirring occasionally. Once spinach mixture is cooked, turn off heat and set aside. In a large bowl combine the Ricotta Cheese, Mozarella Cheese, Parmesan Cheese and egg. Stir to combine. Assembling Lasagna: Pour one cup of tomato sauce (substitute Alfredo Sauce or Pesto Sauce if necessary) on the bottom of lasagna pan. Set one noodle on a flat, clean surface. Place one spoonful of cheese mixture at end of noodle, leaving one inch of space between mixture and edge of noodle. Place one spoonful of spinach mixture over cheese mixutre on noodle. Roll lasagna noodle from edge with cheese and spinach mixture to the opposite end. Place edge down in the lasagna pan. Repeat directions for each lasagna noodle until cheese and spinach mistures have been used. Cover prepared roll ups with remaining sauce and top sauce with extra cheese. Cover pan with tin foil and cook in oven for 30 minutes. Then, take off foil and cook for another 10-15 minutes, or until tops are golden brown.
