Spinach & Bacon Salad W/ Hot Bacon Dressing image

My Gram used to make this all the time...brings back so many memories...enjoy! This recipe can easily be halved.

Number Of Ingredients 11

3/4 pound(s) bacon, cooked and crumbled
1/2 cup(s) green onions, sliced - green tops too
2 tablespoon(s) flour
salt - & pepper to taste
1/3 cup(s) red wine vinegar
1 1/2 teaspoon(s) sugar
1 cup(s) beef or chicken broth
2 cup(s) fresh sliced mushrooms
8 cup(s) fresh spinach leaves - torn
a few - hard boiled eggs, chopped are also great in this salad - optional
fried - onions - like durkee , crumbles

Steps:

  • In a medium sized skillet, cook bacon until crisp, when finished, drain on paper towels, then crumble. Reserve 1/4 cup bacon grease. Place torn spinach and mushrooms in a large serving bowl and toss. Set aside.
  • Place reserved bacon grease back into the same pan as you fried the bacon. Over medium heat, cook the green onions until tender.
  • Stir in the flour and cook an additional minute.
  • Pour in the chicken broth, vinegar, sugar - cook until slightly thicken, won't take long.
  • Now, pour the hot dressing over the spinach - tossing to coat well. Sprinkle on the crumbled bacon and french fried onions if using. Salt and pepper to taste...
