SPINACH AND MANGO SALAD image

3/4 cup slivered almonds
4 tbs red wine vinegar
2 tbs maple flavored balsamic vinegar
2 tbs olive oil
2 tsp dry mustard
1/4 tsp chopped fresh tarragon
salt & ground black pepper to taste
1 bunch fresh spinach - cleaned & torn
2 mangos - cubed

Steps:

  • Preheat oven to 375 F. Put almonds on baking sheet and bake 5-10 minutes, stirring occasionally until lightly toasted. Mix red wine vinegar, balsamic vinegar, olive oil, dry mustard, tarragon, salt & pepper. Toss vinegar mixture with spinatch and mangos and top with toasted almonds.
