Spicy Zucchini Oatmeal Cookies image

Number Of Ingredients 13

1 and 1/4 cups All-purpose Flour
1/2 teaspoon Baking soda
1 and 1/2 teaspoons Cinnamon
1/4 teaspoon Ground cloves
1 pinch Salt (not part of original recipe - recipe needs it)
1/2 cup Butter, softened
2/3 cup Light brown sugar, firmly packed
1 l Egg
1 teaspoon Vanilla
1 cup Quick Cooking Oats
1 cup Zucchini, shredded and drained/squeezed dry (approx 3 small to medium zucchini)
1/2 cup Raisins (used golden), recipe could use more
1/2 cup Pecans, chopped (est. quantity - original recipe did not include)

Steps:

  • Preheat oven to 350 degrees.
  • Cream butter and brown sugar with electric mixer. Beat in egg and vanilla.
  • In separate bowl, mix together flour, baking soda, cinnamon, cloves, salt and oats. Incorporate into creamed butter/sugar/egg mixture. Stir in zucchini, raisins and nuts.
  • Drop by teaspoon full onto greased (or parchment paper lined) baking sheets. Bake 14-16 minutes until edges start to brown. (Cookies are cakelike.)
