SPICY THAI SHRIMP AND NOODLE SOUP image

Number Of Ingredients 14

2 oz rice noodles
8 c chicken stock
1 tbsp grated gingerroot
1 clove garlic
3 tbsp lime or lemon juice
2 tbsp each soy sauce and fish sauce
1 Thai or Serrano chilli pepper, chopped
1 tsp sugar
1 lb large prepared shrimp
1 large julienned carrot
2 green onions
¼ c chopped fresh coriander
¼ c thai basil
1 lime cut in wedges

Steps:

  • Pour boiling water over noodles to cover until tender. Drain In saucepan - bring stock, ginger and garlic to boil. Reduce heat and simmer for 15 min. Add lime juice, soy and fish sauces, chilli pepper and sugar; simmer for 5 minutes. Stir in shrimp, noodles and carrot; simmer for 5 minutes or until shrimp cooked. Divide among bowls. Sprinkle with green onion, coriander and mint. Garnish with lime wedges.
