Steps:
- Pour boiling water over noodles to cover until tender. Drain In saucepan - bring stock, ginger and garlic to boil. Reduce heat and simmer for 15 min. Add lime juice, soy and fish sauces, chilli pepper and sugar; simmer for 5 minutes. Stir in shrimp, noodles and carrot; simmer for 5 minutes or until shrimp cooked. Divide among bowls. Sprinkle with green onion, coriander and mint. Garnish with lime wedges.
