Steps:
- Preheat oven to 425. Combine coriander, cumin and cayenne in small bowl. Rub on chicken
- Drain pineapple and reserve. Add 1/4 c pineapple juice to chili sauce, honey, vinegar and soy sauce. Set aside.
- Preheat oven proof skillet and add about 2 T vegetable oil. When heated add chicken and brown on both sides. Remove chicken. Add onion and red pepper to skillet and sauté for 3-4 min. Add pineapple. Place chicken back in pan on top of pineapple. Pour sauce over. Place in oven and bake until just cooked through, about 25 min.
