SPICY PEANUT CHICKEN image

Number Of Ingredients 13

1/4 cup chicken broth
1 tbsp cornstarch
1 tbsp brown sugar
2 tbsp soy sauce
1 tbsp white vinegar
1/4 tsp ground red pepper (cayenne)
1 tbsp olive oil
1 lb chicken breast, cut into 3/4 inch pieces
1 clove garlic, finely chopped
1 tsp grated ginger root
1 medium red bell pepper, cut into 3/4 inch pieces
1/3 cup dry-roasted peanuts
1 medium scallions, chopped

Steps:

  • 1. Mix broth, cornstarch, sugar, soy sauce, vinegar and red pepper. 2. Heat oil over high heat. Add chicken, garlic, ginger and stir fry about 3 minutes. 3. Add bell pepper and stir fry about 1 minute. 4. Add broth mixture and stir about 1 minute until sauce is thickened. 5. Stir in peanuts. Garnish with scallions.
