- 1. In a saucepan stir together orange juice, soy sauce, garlic, brown sugar, red pepper, ginger, orange peel and hot sauce. Bring to a low boil and turn heat to low. Add cornstarch slurry and stir, keeping it at a simmer. Cook, stirring often, until it thickens. Allow to cool.
- 2. Rinse meat and cut into 1-inch cubes. Place them in the sauce mixture and set aside for several hours. I usually do this step that morning or the night before and let it set in the refrigerator until I'm ready. Cut the peppers and onions into as close to 1-inch square pieces as possible to skewer and set aside. Slice zucchini and set aside.
- 3. Using skewers that have been soaking in water, assemble the vegetables and chicken in alternating order. I try to get at least 3 pieces of chicken on each skewer. Cook on grill until the meat is thoroughly cooked. optional: sprinkle with sesame seeds and serve with rice
