Spicy Orange Kebabs image

Another recipe born from my fiance complaining about "boring chicken" and "typical pork." These are just as great if you leave out the red pepper flakes and hot sauce if spicy isn't your thing. Hope you enjoy as much as we do! google pic until I find my camera cord

SAUCE
1 c orange juice (low or no pulp)
3 Tbsp soy sauce
1 clove minced garlic
3 Tbsp light brown sugar
1/2 tsp crushed red pepper flakes
1 tsp fresh grated ginger
1 tsp fresh grated orange peel
1 Tbsp cornstarch slurry (1 tbsp cornstarch w/ 1 tbsp water)
a few drops hot sauce (to taste)
TO SKEWER
1 lb boneless, skinless chicken breasts or thick cut pork chops
1 large green pepper
1 large red pepper
1 large red onion
15-20 small whole button mushrooms
1 medium zucchini
1 pkg cherry or grape tomatoes
pkg bamboo skewers soaked in water (prevents burning)
sesame seeds to garnish (optional)

Steps:

  • 1. In a saucepan stir together orange juice, soy sauce, garlic, brown sugar, red pepper, ginger, orange peel and hot sauce. Bring to a low boil and turn heat to low. Add cornstarch slurry and stir, keeping it at a simmer. Cook, stirring often, until it thickens. Allow to cool.
  • 2. Rinse meat and cut into 1-inch cubes. Place them in the sauce mixture and set aside for several hours. I usually do this step that morning or the night before and let it set in the refrigerator until I'm ready. Cut the peppers and onions into as close to 1-inch square pieces as possible to skewer and set aside. Slice zucchini and set aside.
  • 3. Using skewers that have been soaking in water, assemble the vegetables and chicken in alternating order. I try to get at least 3 pieces of chicken on each skewer. Cook on grill until the meat is thoroughly cooked. optional: sprinkle with sesame seeds and serve with rice
