Spicy Corn Chowder image

One of my daughter's favorite soups. It is a combination of a few corn chowder receipes I have tried. This one has some heat but not a lot (my daughter likes easy on the spice) It would not be hard to kick up the heat. It is great with some cheesy ciabata bread. Enjoy.

4 slice bacon
1 medium onion
1 red bell pepper, chopped
1 jalapenos, fresh, chopped
3/4 c all purpose flour
4 c chicken stock (1 whole box)
2 medium potatoes
1 c whipping cream
16 oz frozen corn
1/4 tsp cayenne pepper
1 bay leaf

Steps:

  • 1. Cook bacon in a large pan or dutch oven. Set aside cooked bacon for garnish
  • 2. Add onion, pepper, salt, and bell pepper to bacon greased pan.Saute until crisp tender. Then add in your jalapeno and garlic. Simmer.
  • 3. Add flour and cook, stirring, until it is a nice blond color.
  • 4. Add chicken stock and potatoes. Simmer for 10 minutes or until potatoes are tender.
  • 5. Add cream, corn and cayenne. Simmer for 15 minutes.
  • 6. Serve soup garnished with the bacon. A side salad and cheesy garlic bread goes perfect with this soup.
  • 7. Enjoy!
