Steps:
- Preheat oven to 375F. Place squash on a baking pan, toss with olive oil and salt and pepper, bake for 45-60 minutes. Melt butter in saucepan. Add onions, garlic and shallots; cook until soft. Add squash and combine. Using a food processor or blender, blend squash. Put in large pot and add broth and cream. cook another 20 minutes.
