SPANISH CHICKEN image

Yield 4 servings

Number Of Ingredients 7

2-3 Garlic cloves
1/2 Onion, diced
1 package of chicken, either 4-5 chicken breasts or 8-10 chicken thighs
1 jar Goya Sofrito
1 small jar pimientos (Goya is fine)
Half of a large jar of Goya Manzanilla Olives
1 package of Yellow Rice (Goya is also favored)

Steps:

  • (1) Prepare and start the Yellow Rice per package instructions. (2) Saute the garlic and onion in olive oil until limp, and then add the chicken and saute until golden brown on outside. Meanwhile, slice the olives as small as desired. When the chicken is brown, add the olives, pimientos, and Sofrito to the pan. Put just a little bit of water in the Sofrito jar to rinse out and all the last of the sauce to the pan. (3) Allow the chicken to simmer in the sauce, turning once if you desire, until the rice is ready, about 20 minutes.
