spaghetti with cherry tomatoes and kale image

Number Of Ingredients 6

1 pound spaghetti
1 pound cherry tomatoes
2 lemons, zested
1/4 cup EVOO ( plus 3 TBS)
2 teaspoon kosher salt
1 bunch kale or spinach, washed and chopped _leaves only

Steps:

  • bring quart of water to boil
  • place spaghetti, tomatoes, lemon zest, oil and 2 tsp kosher salt in a large, dry, shallow pan- they dry spaghetti can lie flat
  • carefully add the boiling water to the pan with the spaghetti. over pan and bring up to a boil. remove lid and simmer for 6 minutes. use tongs to move the spaghetti around so that it doesn't stick.
  • add kale or spinach and continue cooking until remaining liquid had reduced to a sauce and the pasta is cooked through. tase and season with salt and pepper and top with parmesam
