SOY-MARINATED CHICKEN THIGHS image

3 tablespoons low-sodium soy sauce
2 tablespoons extravirgin olive oil
2 teaspoons chopped fresh thyme
8 (2-ounce) skinless, boneless chicken thighs
2 garlic cloves, minced
Cooking spray

Steps:

  • 1. Combine first 5 ingredients in a large zip-top plastic bag; seal. Marinate in refrigerator 4 hours or up to 24 hours, turning occasionally. 2. Prepare grill to medium-high heat. 3. Remove chicken from bag; discard marinade. Place chicken on grill rack coated with cooking spray; grill 3 minutes on each side or until done.
