Soy Ginger Chicken Breasts with Spicy Peanut Sauce image

Number Of Ingredients 12

4 boneless skinless chicken breasts
1/4 cup soy sauce
1 tablespoon grapeseed or vegetable oil
2 teaspoon minced fresh ginger
1 tablespoon green onion tops, minced
3/4 cup chunky peanut butter
1 cup chicken broth
2 tablespoon brown sugar
2 tablespoon soy sauce
1 tablespoon lime juice
1 tablespoon minced fresh ginger
2 teaspoon Sriracha sauce or chili paste with garlic

Steps:

  • Preheat oven to 400 degrees.
  • Trim chicken and pound between two sheets of plastic wrap to an even 1/2-inch thickness. Arrange in a greased shallow baking dish just large enough to hold the breasts without crowding. Stir together the soy sauce, oil and ginger. Pour over the chicken, turning to coat. Bake for 20 minutes or until chicken is cooked through.
  • For Peanut Sauce, combine peanut butter, broth, brown sugar, soy sauce, lime juice, ginger and Sriracha sauce in a small saucepan. Cook over medium heat, stirring constantly, until smooth and thickened, about 4 minutes. Lower heat and simmer, 1 minute longer. Spoon over chicken breasts and sprinkle with green onions.
