1/2 cup chopped red onion
2 tablespoons minced garlic
2 lbs stewing beef
8 ounces diced roasted green chilies
1 tablespoon minced cilantro
1/2 teaspoon crushed red pepper flakes
1/2 teaspoon black pepper
4 cups beef broth
4 cups vegetable broth
8 cups water
12 cups shredded green cabbage
2 tablespoons sea salt

Steps:

  • in a large non-stick pot over medium heat cook onion and garlic with 2 tbsp water until soft. Add beef chiles, cilantro, red pepper flakes, and pepper. Stir until beef is coated with spices.
  • Pour in broths and water. Increase heat to high. When soup boils, reduce to medium. Add cabbage and salt. Stirring occasionally, simmer one hour.
  • You can also throw everything in the crock pot and cook on low for 6-8 hours.
