SOUTHWEST BREAKFAST CASSEROLE image

1 pkg. (24 oz.) Ore-Ida Southern Style Hash Browns, frozen
2 cups shredded pepper jack cheese
1 teas. crushed oregano
1 med. red bell pepper cut into six rings and seeded
6 eggs
3 T. butter, melted (optional)

Steps:

  • Combine potatoes, cheese and seasonings in 13"x9"x2" baking dish, sprayed with non-stick cooking spray. Arrange pepper rings over top of potato mixture. Crack one egg into each pepper ring. Brush eggs with melted butter. Bake at 400 degrees for 20 min. or until egg whites are set and potatoes are tender.
