Steps:
- Slice your tomatoes and drain for 10 minutes on several layers of paper towels. Sprinkle your baked, cooled pie crust with a little bit of the parmesan--this will help make a moisture barrier. If you're using bacon, sprinkle that over the cheese, and dust with a few pinches of flour. Mix together the cheese and mayo until smooth. Now, the recipe I used recommends piling in the tomatoes, sprinkling with the rest of the flour, basil, and pepper, and topping with the cheese mixture. However, after making it I would make these changes: Place a layer of tomatoes in the pie crust, cutting some pieces in wedges to make a uniform layer. Sprinkle with a little basil, pepper, and flour. Drop a few smallish spoonfuls of the cheese mixture. Repeat, making sure you leave a parger amount of the cheese mixture to really cover the top of the pie. Bake at 350 degrees for 25-30 minutes until golden brown and delicious-smelling. Let cool to room temperature. Eat up!
