Southern Stewed Okra image

When I was growing up, my grandparents grew okra. We had this quite often growing up. When corn was in season, we would add some of that too!

Number Of Ingredients 10

1 lb fresh okra
1/2 c onion, finely chopped
1/2 c green bell pepper, minced
2 clove garlic, minced
3 Tbsp butter, melted
3 c fresh tomato, chopped
1 1/2 tsp salt
1 tsp fresh parsley, minced
1/4 tsp black pepper
1/8 tsp ground red pepper

Steps:

  • 1. Rinse the okra; drain well, and pat dry. Remove the tips and stem ends. Set aside.
  • 2. Saute onion, green pepper, and garlic in the butter in a Dutch oven over medium heat until tender. Add the okra, tomato, and remaining ingredients.
  • 3. Cover and cook 20 minutes or until the okra is tender, stirring occasionally.
