Southern Pole Beans image

Number Of Ingredients 5

2 pounds fresh pole beans, strings removed, ends trimmed, snapped 2 inches long
6 pieces bacon
1 tablespoon vegetable oil
1 cup strong chicken broth
3 tablespoons butter

Steps:

  • Wash beans well, then drain. Fry bacon in cast-iron skillet or Dutch oven; reserve drippings, and set bacon aside. Sauté pole beans in hot bacon drippings and oil until bright green, about 5 minutes, turning occasionally. Add chicken broth, butter, and crumbled bacon. Add just enough water to almost cover the beans. Season with salt and pepper to taste. Bring to a boil, then lower heat to a simmer. Simmer several hours, until beans are very tender and slightly shriveled. Turn every 30 minutes or so, allowing beans on top to go to bottom. More water may have to be added during cooking to keep water level almost covering beans.
