South American Banana Bread image

This is how they make traditional banana bread in Colombia...with cinnamon. I found this at Sparkpeople while looking for South American recipes for Culinary Quest 2014. I did some tweaking for an easier read based on how I make my own banana bread.

1 c all purpose flour
1/2 c whole wheat flour
1 tsp baking powder
1/2 c unsalted butter
2 bananas, mashed
1/2 c brown sugar
1/4 tsp salt
1 tsp cinnamon
1 Tbsp lemon juice
1 egg, beaten
1/2 c pecans, chopped

Steps:

  • 1. Preheat oven to 350 degrees
  • 2. Cream softened butter and brown sugar. Add the bananas, salt, cinnamon, lemon juice, and the beaten egg. Beat wet ingredients well.
  • 3. In a separate, small bowl mix the flours and the baking powder.
  • 4. Then carefully mix the dry into the wet banana mixture, but DO NOT over mix - just stir it carefully enough to incorporate the flour.
  • 5. Lastly, add the chopped pecans.
  • 6. Bake & check for doneness at 30 minutes.
