I had some sourdough bread I needed to use, some ham cubes, roasted red peppers and scallions. Add some Swiss cheese and eggs and this is what I ended up with. What a wonderful flavor, my family loved it! I hope you enjoy this yummy breakfast as much as we did. Enjoy!

Steps:
- Preheat oven to 350 degree F. Spray an 8 inch casserole dish with nonstick cooking spray. Set aside. Bake sour dough cubes until toasty. In a medium sized bowl, whisk together eggs, salt, pepper and mustard.
- Add the toasted sour dough cubes, 1/2 the peppers, 3/4 cup cheese, ham and 1/2 scallions. Mix well.
- Pour into prepared baking dish. Top with remaining scallions, roasted red peppers and cheese.
- Bake for roughly 25 minutes or until set.
- Turn oven to broil and bake an additional few minuted or until golden.
- Remove from oven and slice into desired servings. Top with sour cream and scallions. Delicious!
