~ Sourdough - Ham, Egg & Swiss Bake ~ My Way image

I had some sourdough bread I needed to use, some ham cubes, roasted red peppers and scallions. Add some Swiss cheese and eggs and this is what I ended up with. What a wonderful flavor, my family loved it! I hope you enjoy this yummy breakfast as much as we did. Enjoy!

Number Of Ingredients 8

2 slice(s) sour dough bread / cubed and toasted ( about 1 cup )
6 - eggs
1 1/2 tablespoon(s) dijon mustard
kosher - salt & pepper to taste
about - 4 ounces sweet red peppers ( fire roasted ) chopped - they come in a jar
about - 1 1/2 cup shredded swiss cheese - divided
3 1/2 - 4 ounce(s) cubed, pre cooked ham
3 - scallions, thin sliced - divided

Steps:

  • Preheat oven to 350 degree F. Spray an 8 inch casserole dish with nonstick cooking spray. Set aside. Bake sour dough cubes until toasty. In a medium sized bowl, whisk together eggs, salt, pepper and mustard.
  • Add the toasted sour dough cubes, 1/2 the peppers, 3/4 cup cheese, ham and 1/2 scallions. Mix well.
  • Pour into prepared baking dish. Top with remaining scallions, roasted red peppers and cheese.
  • Bake for roughly 25 minutes or until set.
  • Turn oven to broil and bake an additional few minuted or until golden.
  • Remove from oven and slice into desired servings. Top with sour cream and scallions. Delicious!
