Steps:
- Preheat oven to 350°F. Stir fry chicken, 1/2 of the garlic and the onion until brown. Meanwhile, mix the following ingredients in a large bowl: cream cheese, 1/2 of the shredded cheese, the remaining garlic, cream of chicken soup, and green chilies. Set aside part of this cream mixture. Once the chicken is cooked, stir into the cream mixture.
- In a 9 x 13 casserole dish sprayed with cooking oil, begin making enchilada rolls with the tortillas and chicken filling. Once all tortillas have been filled, blend the rest of the chicken filling with the cream mixture you set aside earlier; spread this over your rolled enchiladas, sprinkle remaining shredded cheese on top.
- Bake for 25 - 30 minutes or until cheese is completely melted.
