SOUP OF BITTER MELON WITH MINCED PORK image

Number Of Ingredients 15

1 large or 2 small bitter melons
pinch of salt
150g minced pork
2 tablespoons light soy sauce
1 teaspoons palm sugar
4 cups stock
extra 2 tablespoons light soy sauce
pinch white sugar
pinch ground white pepper
1 tablespoon coriander leaves
Garlic paste =
2 coriander roots, scraped
pinch of salt
3 garlic cloves peeled
10 white peppercorns

Steps:

  • Wash bitter melons and cut into 2 cm rounds. Remove seeds and surrounding pith with a spoon. Rub melon rings with salt, then leave for an hour in colander. Rinse. Blanch from a cold-water start, refresh. Taste the melon; if it is still too bitter, carefully blanch again. Make garlic paste by pounding ingredients together one by one. Mix with minced pork in medium bowl and season with soy sauce and palm sugar. Gather the meat into a ball and throw it into the bowl. Repeat this slapping process several times until mixture becomes smoother and firmer (this helps hold meat together during cooking). Stuff melon rounds with pork mixture. Bring stock to boil and season with soy sauce and white sugar. Add melon and poach gently for 10 min. Serve sprinkled with pepper and coriander.
