I got this from my friend, Janet Lund, whom I worked with at NAC in Salt Lake City, Utah. She brought them to work one day and I fell in love with them and asked for the recipe. I made them again a few months ago and fell back in love with them. They are very soft and they kind of sneak up on you... eating one, then another,...

Number Of Ingredients 14

CREAM TOGETHER IN A BOWL:
1 c sugar
1/2 c softened butter
1 beaten egg
SIFT DRY INGREDIENTS
2 c flour
1 tsp baking soda
1/2 tsp salt
1/2 tsp cloves
1 tsp cinnamon
ADD:
1 c grated zucchini
1 c raisins
1/2 c chopped walnuts

Steps:

  • 1. CREAM sugar, butter, & egg till creamy
  • 2. SIFT dry ingredients together and add to mixture
  • 3. ADD zucchini, raisins, nuts; blend well
  • 4. DROP by rounded teaspoonfuls on greased cookie sheet
  • 5. BAKE 375 F for 12-25 min or until done
  • 6. DON'T OVER BAKE -- These are soft cookies
  • 7. In searching for just the right picture for these, I did not really find one that is exact. And I noticed that other people add chocolate chips and oatmeal to their recipes. I think they are perfect the way they are. I don't think those things are needed, but that is up the individual. Enjoy!
