Sock it to Me Cake- Pecan Free Version image

I am allergic to nuts so I am constantly modifying recipes. Here's a Sock it to me cake recipe sans pecans. Enjoy!

1 package 18.25 ounce yellow cake mix
1/2 c white sugar
3/4 c vegetable oil
4 eggs
1 tsp vanilla extract
1/2 c packed brown sugar
1 1/4 c sour cream regular or reduced fat only
1 Tbsp cinnamon
QUICK GLAZE
1/2 c milk
1/4 c powdered sugar
3 Tbsp butter or margarine

Steps:

  • 1. Mix together the cake mix, sugar, oil, eggs and vanilla. Fold in the sour cream.
  • 2. Put half the batter in a bundt pan.
  • 3. Mix the brown sugar and cinnamon and sprinkle over the batter in the pan. Pout the reaminder of the batter on top.
  • 4. Bake at 350 F or 175 C for 70 minutes or until tests done (I use the toothpick test. Stick a toothpick down in the cake. Dry toothpick=done cake)
  • 5. Glaze: Mix ingredients and whisk or beat until smooth. Drizzle over the cake while still hot. The more the better for me :-)
