Smokin' Turkey Melt with Red Onion Marmalade image

Oh my... the red onion marmalade is delicious! It pairs great with the smoked turkey, but you'll find tons of other users for it too. The garlic butter is the icing on the sandwich.

RED ONION MARMALADE
4 c red onions, chopped
2 Tbsp olive oil, extra virgin
1 pinch red pepper flakes
3/4 c brown sugar, firmly packed
2/3 c apple cider vinegar
1/3 c madeira wine
1/4 c golden raisins
SMOKING THE TURKEY
16 oz turkey or chicken breasts - if you are smoking the meat
worchestershire ground black pepper blend from mccormick (or regular black pepper)
roasted garlic salt from lawry's (or regular table salt)
or skip this step and just buy smoked turkey or even boneless smoked pork chops are great
GARLIC BUTTER
2 Tbsp garlic cloves, minced
1 c butter, softened salted (2 sticks)
1/2 c parmesan cheese, grated
1 tsp roasted garlic salt from lawry;s or regular table salt
1/2 tsp worchesterchire ground black pepper blend from mccormick or regular black pepper
1/4 tsp smoked paprika
ASSEMBLE THE SANDWICH
brie cheese
smoked gouda cheese
hoagie or sub rolls

Steps:

  • 1. If you are smoking the breasts yourself, then salt and pepper the turkey (or chicken) filets. Place on the grill rack of the Cameron smoker. I used the hickory chips for this recipe. Follow the directions of the smoker and smoke for approximately 10 minutes. Another great choice is to skip this step and buy boneless smoked pork chops.
  • 2. Meanwhile heat the oil and add the onions in a 10 or 12 inch skillet. Saute over medium heat, constantly stirring, until softened. Add the red pepper, brown sugar, apple cider vinegar, Madeira and raisins. Stir constantly and cook uncovered until mixture is thickened, dark and jammy.
  • 3. Mix all the ingredients for the garlic butter.
  • 4. Split the hoagie rolls, slather with garlic butter and add the cheese. Toast in the broiler until crispy and cheese is melted. Add the sliced smoked turkey and top with the red onion marmalade.
