SMOKED SALMON SOUFFLE image

Yield 4 servings

Number Of Ingredients 9

1 1/2 TBS Butter
1 1/2 TBS Olive oil
1/6 Cup All-purpose flour
Pinch Cayenne
1/4 tsp Salt
3/4 Cups Milk
1 1/2 Cups Shredded Cheddar Cheese (6oz)
3 oz Hot Smoked Salmon, crumbled
3 Eggs, Separated

Steps:

  • Preheat oven to 300 degrees. In a saucepan, melt butter in oil. Stir in flour, salt and cayenne. Add milk and cook over medium high heat, stirring until bubbly. Cook for 2 minuets. Remove from heat and stir in cheese. Stir until cheese is melted. Add salmon and stir. Whisk egg yolks and add to cheese mixture. Beat egg whites until stiff peaks form. Fold a large spoonful of whites into cheese mixture. Repeat twice, folding to combine. Add entire cheese mixture to whites and fold together. Pour mixture into a 1 quart soufflĂ© dish. Place in oven and cook for about 45 mins until set and a sharp knife inserted into the center comes out clean. Serve hot.
