SMOKED SALMON CUPS image

24 won ton wrappers
2 T. butter, melted
4 oz. smoked salmon, flaked into small pieces
1/2 c. finely sliced green onion
1 T. lime juice
2 t. grated ginger
1/2 t. salt
1 small avocado, finely diced
optional:
1 small tomato, seeded
capers

Steps:

  • Preheat oven to 350-degrees. Lay wrappers flat and brush both sides with melted butter. Press into mini muffin cups, pleating each to fit. Bake until golden brown, 7-9 minutes. In a small bowl, combine salmon, green onion, lime juice, ginger and salt. Mix well. Add avocado and toss gently. Fill won ton cups, top with capers and serve immediately.
