Small Batch Vanilla Ice Cream image

Enjoy this vanilla ice cream with your favorite dessert sauce or fresh berries.

Number Of Ingredients 5

1 1/2 cups heavy cream
1 cup half-and-half
3/4 cup granulated sugar
1 vanilla bean, scraped, seeds reserved or 1 teaspoon vanilla
3 large egg yolks

Steps:

  • In a saucepan, whisk together the cream, half-and-half, granulated sugar, and vanilla seeds or vanilla extract. Heat over medium heat, stirring, until it begins to boil. Whisk about 1 cup of the hot mixture into the egg yolks, then return yolk mixture to the saucepan, stirring constantly. Continue cooking, stirring, until it is almost boiling. Strain through a sieve to remove any lumps, if necessary.
  • Chill thoroughly and freeze according to your ice cream maker's instructions.
  • Makes 1 pint.
