Slow-Cooker Spanish Chicken image

Spice up your Spanish dinner with slow cooked chicken, sausage and vegetables.

Number Of Ingredients 12

1 3/4 lb boneless skinless chicken breasts, cut into 1-inch pieces
1 lb turkey Italian sausages, cut into 1-inch pieces
1 large red bell pepper, chopped (1 1/2 cups)
1 large onion, chopped (1 cup)
2 cloves garlic, finely chopped
1 teaspoon dried oregano leaves
1/2 to 1 teaspoon crushed red pepper
1 can (28 oz) diced tomatoes, undrained
1 can (6 oz) tomato paste
1 can (14 oz) artichoke heart quarters, drained
1 can (4 oz) sliced ripe olives, drained
3 cups hot cooked rice

Steps:

  • In 3 1/2- to 4-quart slow cooker, mix all ingredients except artichoke hearts, olives and rice.
  • Cover and cook on Low heat setting 6 to 8 hours.
  • Stir in artichoke hearts and olives; heat through. Serve with rice.
