Steps:
- 1. In 6 quart slow cooker, place beef, seasoned with 1/2 tsp both salt and pepper.
- 2. Mix together with whisk cornstarch, dry red wine, tomato paste, beef broth w/seasonings.
- 3. Place cut-up veggies in the mixture to coat veggies. Then put them over beef already in the crockpot.
- 4. Cover crockpot and cook until beef is fork tender, 7-8 hours on Low setting or 6-7 hours on High setting.
- 5. Place beef on cutting board and thinly slice. Put beef back in with veggies, mix beef with veggies and serve.
