Slow-Cooker Pineapple-BBQ Chicken image

Cut-up pieces of a broiler-fryer chicken simmer in a sweet and sassy barbecue sauce with pineapple chunks and peppers to make this tasty slow-cooker dish.

1-1/4 cups HEINZ BBQ Sauce Hawaii Style Sweet & Smoky, divided
1 cup fat-free reduced-sodium chicken broth
1 whole chicken (4 lb.), cut up, skin removed
2 large red peppers, coarsely chopped
1 onion, chopped
1 can (20 oz.) pineapple chunks in juice, drained
8 cups cooked long-grain white rice

Steps:

  • Reserve 1/4 cup barbecue sauce for later use. Mix remaining barbecue sauce with chicken broth in slow cooker sprayed with cooking spray until blended.
  • Top with all remaining ingredients except rice; cover with lid.
  • Cook on LOW 6 to 8 hours (or on HIGH 4 hours).
  • Serve chicken mixture over rice topped with reserved barbecue sauce.
