Slow Cooker Meatloaf Plus image

If you have a busy day planned and you want a good meal, this is the dinner you want waiting for you. Get the crusty bread, everything you need, done. No oven. Just a good hot meal! Enjoy!

2 tablespoon(s) olive oil
2 teaspoon(s) garlic minced
2 1/2 pound(s) gound beef, 90 percent lean
1/3 teaspoon(s) thyme, dried
1 1/4 teaspoon(s) kosher salt
1/2 teaspoon(s) pepper
1/4 cup(s) beef broth
2 tablespoon(s) worcestershire sauce
2 eggs
3/4 cup(s) breadcrumbs
3/4 cup(s) ketchup, divided
1 tablespoon(s) parsley, dried
1 pound(s) small potatoes, peeled and halved
1 pound(s) carrots, peeled and cut in chunks

Steps:

  • Spray a 6 quart slow Cooker / crockpot with cooking spray.
  • Heat 1 tablespoons of the olive oil in a small pan over medium heat and add the minced garlic and cook for 30 seconds.
  • In a large bowl add the garlic, ground beef, thyme, salt, pepper, beef broth, Worcestershire sauce, eggs and breadcrumbs. Stir well to combine. I use my hands.
  • Mix the remaining olive oil and the potatoes and carrots. Season with salt and pepper.
  • Form the beef mixture into a loaf and place in the slow Cooker.
  • Slather the loaf with half of the ketchup.
  • Add the potatoes and carrots around the loaf.
  • Cover the slow Cooker and cook on low for 7 - 7.5 hours. Check to make sure vegetables are tender.
  • Slather the remaining ketchup over the cooked meatloaf and sprinkle with parsley. Slice and serve.
