Steps:
- Spray a 6 quart slow Cooker / crockpot with cooking spray.
- Heat 1 tablespoons of the olive oil in a small pan over medium heat and add the minced garlic and cook for 30 seconds.
- In a large bowl add the garlic, ground beef, thyme, salt, pepper, beef broth, Worcestershire sauce, eggs and breadcrumbs. Stir well to combine. I use my hands.
- Mix the remaining olive oil and the potatoes and carrots. Season with salt and pepper.
- Form the beef mixture into a loaf and place in the slow Cooker.
- Slather the loaf with half of the ketchup.
- Add the potatoes and carrots around the loaf.
- Cover the slow Cooker and cook on low for 7 - 7.5 hours. Check to make sure vegetables are tender.
- Slather the remaining ketchup over the cooked meatloaf and sprinkle with parsley. Slice and serve.
