Slow-cooker Chicken Curry (Liz DellaCroce @ thelemonbowl.com) image

Number Of Ingredients 13

1 can Full-fat coconut milk
1 cup Chcken stock
15 ounces Tomato sauce
3 tablespoons Curry powder
1 teaspoon Salt
1 teaspoon Cayenne pepper
1 pound Chicken, boneless skinless breasts or thighs
1 cup Onion, thinly sliced
4 cloves Garlic
1 can Chickpeas, drained and rinsed
1/2 head Cauliflower
1 cup Peas, frozen
2 tablespoons Lemon juice

Steps:

  • Whisk together first six ingredients in slow cooker.
  • Add chicken, onions, garlic, chickpeas, and cauliflower.
  • Using tongs, toss to coat.
  • Cook on High for 4 hours, or Low for 8 hours.
  • Add peas 5 minutes before serving.
