I love kielbasa and sauerkraut but wanted a healthier version & so decided 1 busy morning to toss it all into the slow cooker. It was all gone by that night, lol..hubby at 3 bowls.

Steps:
- Spray a 5 quart slow cooker w/ cooking spray. Place potatoes, 1 tsp thyme, salt & pepper in bottom of cooker, toss to coat. Place oil in a large skillet over med-high heat. Add the sliced kielbasa and cook, stirring until lightly browned. Set aside the kielbasa in a bowl.
- To the skillet, add onion & cook, stirring until light brown, about 5 mins. Put onions on top of potatoes in cooker. Add broth to skillet, scraping up any brown bits. Pour into cooker.
- In th bowl w/ set aside kielbasa, add Dijon mustard & toss to coat. Arrange kielbasa on top of onions in cooker. Spread sauerkraut, ( with any added ligiud reserved,) over kielbasa on top. Add reserved liquid. Cover & cook, on low for 4 hrs or until potatoes are tender. Sprinkle w/ 1 tbsp fresh, chopped thyme.
