Skinny Slow Cooker Gumbo image

A healthy alternative to the high-calorie gumbo that will settle your craving without the guilt. Add rice, okra, and shrimp if you like. Serve over cooked brown or white rice.

2 pounds skinless, boneless chicken thighs, cubed
2 (14.5 ounce) cans stewed tomatoes
1 pound turkey sausage, casings removed and crumbled
1 (14.5 ounce) can reduced sodium chicken broth
1 large onion, chopped
1 green bell pepper, chopped
3 cloves garlic, minced
1 tablespoon Cajun seasoning
¼ teaspoon cayenne pepper
¼ teaspoon ground black pepper

Steps:

  • Combine chicken thighs, tomatoes, turkey sausage, chicken broth, onion, green bell pepper, garlic, Cajun seasoning, cayenne pepper, and ground black pepper in a slow cooker. Stir together to combine.
  • Cook on Low until flavors are blended, about 6 hours.
