Single Serving Mini Meat Loafs image

This has to be the easiest and best tasting meat loaf i have had and even my family love it (they normally refrain from eating meat loaf).

Number Of Ingredients 9

100 g lean ground beef
2 tablespoons rolled oats
1/8 cup onion, finely sliced
1/8 cup carrot, finely grated
1/2 egg, slightly beaten
1/4 teaspoon mixed herbs
1/2 teaspoon curry powder
1 teaspoon hoisin sauce
1/2 tablespoon tomato paste

Steps:

  • Mix all the ingredients together in a bowl.
  • If time permits chill in the fridge for an hour or so.
  • Shape mixture into a loaf.
  • Place in an oven proof container and cover.
  • Cook for 25min at 180-200 deg C.
  • Removed from oven and top with tomato sauce (can mix 1 tbsp of brown sugar if you have a sweet tooth).
  • Return to oven for 15-20 more minutes or until cooked.
  • Let the loaf sit for a couple of minutes before cutting or serving.
