Simple Scotch Shortbread image

This super fast, crumbly, buttery-rich shortbread is our family's favorite cookie!

1/2 lb butter, room temperature
1/2 c sugar
2 c all purpose flour

Steps:

  • 1. Preheat your oven to 325 degrees.
  • 2. Cream together the butter and sugar. Add flour and mix until just combined. The dough will be crumbly.
  • 3. Press the dough together into a rectangle or circle onto an ungreased cookie sheet. Try to make the dough uniformly thick, even on the edges, roughly 3/4" thick. Prick the dough all over with a fork. I usually prick mine in a grid so I have lines to cut on when then they are baked.
  • 4. Bake 1 hour or until just golden. Cut into squares while still warm. Let cool, and enjoy!
