SHRIMPS/LOBSTER TAILS IN BLACK BEAN SAUCE image

2 lbs raw jumbo/colossal shrimp, deveined and cleaned
2TBSP sesame oil
½ tsp chicken soup broth powder
½ tsp cayenne pepper
Or
4 10 oz lobster tail each cut in five pieces with shell on
Flour to coat
2 TBSP vegetable oil
4 cloves of chopped garlic
2 TBSP chili paste in oil (use chili powder mixed with olive oi to make paste)
2 TBSP black beans
1 cup chicken stock
4 TBSP oyster sauce
4 TBSP finely diced red pepper and green pepper
4 TBSP finely diced red onion
4 TBSP sliced green onion
Dash of sugar to taste

Steps:

  • Shrimp: Mix sesame oil, broth powder and cayenne pepper. Toss in shrimps and mix well. Place shrimp on skewers or fish grill. Grill shrimp 3 or 4 minutes per side. Set aside. or Lobster tails: Coat lobster tails with all purpose flour. Deep fry in 2-3 cups of oil at about 375 degrees until it turns light brown, about 1 ½ minutes. Set aside In skillet, sauté garlic, chili paste and black beans with 2 TBSP vegetable oil for about 1 minute (make sure the garlic does not burn). Add 1 cup of hot chicken stock and oyster sauce and bring to a boil for 1 to 2 minutes. (can be made ahead) Chicken tenderloin breasts: threeper person; 12 pieces. Follow same directions as for the shrimp. Add shrimp/lobster, bell peppers, red and green onion and cook for 1 minute more until the sauce mixes into the shrimp and vegetables.
