SHRIMP WITH SPINACH, BACON AND BRIE image

Number Of Ingredients 7

2 TBLS Olive Oil
1 lb cooked peeled shrimp
1 bag baby spinach
1/2 pound diced bacon
1 small bottle prepared pesto
1 small wheel brie cheese, cut in 1 inch cubes
1/2 package angel hair or thin spaghetti

Steps:

  • Bring pot of water large enough to cook pasta to a boil. In large saute pan, cook bacon over medium heat until crisp. Remove to paper towels to drain. Pour off bacon grease and wipe pan. Heat olive oil in pan and add spinach until wilted. Add shrimp and 1/2 of jar of pesto and return bacon to pan to heat through.Cook and drain pasta according to package directions. Put pasta in large bowl, toss with shrimp mixture and cubes of brie. Top with freshly grated parmesan and black pepper as desired.
