SHRIMP WITH PASTA AND SUN DRIED TOMATOES image

Number Of Ingredients 9

¼ cup olive oil
1 ½ pounds large raw shrimp, purchased shelled and deveined
3 green onions, chopped
1 or 2 garlic cloves, minced
½ cup sum dried tomatoes, sliced thin
½ cup dry white wine
1 cup whipping cream (I substitute soy creamer because Brian is lactose intolerant, I think that whipping
cream creates a richer taste and thickens better if no one is lactose intolerant.)
6 oz of fresh pea pods/snow peas with strings removed-this is roughly one box of pea pods from Whole Foods.

Steps:

  • I steam the pea pods separately so that they are al dente and retain a bright green color. I then add them to the sauce in the last few minutes before serving.) 1T dried or 2T fresh basil 8 oz of fresh or dried pasta (you won't need the entire batch of the fresh pasta recipe I provided unless you double this recipe but the extra pasta can just be tossed with olive oil and parmesan ch
