PASTA WITH SAUSAGE AND SWISS CHARD image

Number Of Ingredients 7

1/4 C olive oil
2 Tsp butter
1-2 cloves garlic, chopped
1/2 lb sausage (spicy)
1-2 bunches swiss chard (roughly chopped)
1/2 to 1 pint heavy cream
1/2 lb pasta (I use mezze rigatoni)

Steps:

  • Bring pot of water to a boil for the pasta. In a separate pan (or high sided pot), saute garlic in olive oil and butter. Take sausage out of casings, roughly chop, and add to pan. Cook for 10 minutes. Add swiss chard, still until leaves are wilted. Add cream (I usually only use 1/2 pint) and cook on low heat to slightly thicken. Meanwhile, boil rigatoni in water until a few minutes undercooked. Drain pasta and then add to sausage/swiss chard mixture. Mix and simmer at low heat until pasta is done.
