SHRIMP & ARTICHOKE LINGUINE ALFREDO image

8 oz. Linguine
1/2 c Frozen artichoke hearts, thawed and chopped, divided
1 c Sour Cream
1/2 c Chicken broth - reduced sodium
1/2 c Celery - chopped
1/2 c Red Onion - chopped
1/3 c Parmesan Cheese - grated
1 T Parsley - chopped
1 T Garlic - minced
1 t Rosemary - chopped
1 t Basil leaves - chopped
1/2 t Red Chili Flakes
1/2 t Salt
1/2 t Black Pepper - freshly ground
1/2 lb. Shrimp - peeled and deveined

Steps:

  • 1. Cook linguine according to package directions. 2. Reserve 1/4 c artichoke hearts. In a food processor, whirl remaining ingredients except shrimp until blended but still chunky. 3. Pour sauce into a medium saucepan. Stir in shrimp and reserved artichokes; cook over medium heat until sauce begins to boil. Reduce heat and cook until sauce thickens, about 10 mins. Drain pasta, put in bowl and pour sauce on top.
